Why is A2- milk different from any other commercial milk?
Milk protein consists mainly of casein. We differenciate alpha(α), beta(β), gamma(γ) and kappa(κ) caseins. In the protein content of A2-milk we find a certain form of β-casein, the so called β-casein A2, instead of form β-casein A1. A unit of β-casein found in milk protein is built of 209 amino acids, which in case of form A2 and A2, differ only in the 67th amino acid of the amino acid chain. In the A1 form of β-casein we find the amino acid, histidin, while in form A2, there is the amino acid, proline, on the 67th position.

What does ESL technology mean?
It means, heat treatment at very high temperature( ESL- heat treatment): such a heat treatment above 100 °C grades, during which milk, cream or other milk product gets heated at about 134 °C grades, for at least 0,1 second.
